Every Thursday, we whip up our very own butter from 10 kilos of sour double cream delivered to us by David Peacock from Erdhof Seewalde. David’s cattle belong to the “Angler Rotvieh” breed, a particularly rare and old breed which – thanks to the high fat content of its milk – is also known as the “German butter cow.” This leaves us with about three liters of buttermilk each week, so get it while supplies last!

Buttermilk isn’t just a refreshing drink but also a great ingredient to your home cooking. Reduce it to about half with a bit of butter for texture, add salt, and you’ll end up with a deliciously creamy and slightly tangy sauce, which works perfectly with blanched onions or fresh green vegetables.
