Butter from Brodowin, matured, salted and flavored with homemade buckwheat Shio-Koji. This enriches the butter with notes of umami, makes it cheesy and wonderfully nutty. The butter continues to ripen in the jar and can be eaten well past its expiration date – provided, of course, you appreciate the increasingly cheesy flavor.
On good sourdough bread or in dishes that benefit from the depth and notes of cheese, such as hollandaise sauces or beurre blanc. Also feel free to try it in baking. If you’re making sweet pastries, just be sure not to add more salt to the dough.
