Sweet cherries in cherry juice

We’ve once again taken it upon us to rehabilitate a product that supermarkets do badly, but that could be so, so amazing if done right. 

Here goes: a jar full of perfectly ripe, sun-drenched, deliciously sweet, local cherries. We’ve taken out the stones by hand and then put the cherries in concentrated cherry juice without adding any sugar – for just about the most intensive cherry aroma you’ll ever have the pleasure of tasting.
