A particularly grainy polenta, rich in bran with a deep aroma bound to enchant any and all lovers of hearty cornmeal. What’s behind this incredible quality? Well, it’s simple: a mix of tradition, experience, the careful selection of special plants and a way of farming and cultivating that doesn’t cut any corners. For this special variety, DeTacchi use only the naturally pure, highly aromatic Maranello corn typical of the Marano Vicentino region.

In order to bring out the true depth of its taste and to achieve optimal consistency, this precious corn is ground coarse with a stone – this being the only variety for which DeTacchi employ this type of processing. As with many of the products in our shop, this is a one way ticket: you won’t be going back to the supermarket brand after you’ve tried it. 

Cooks in about 45 minutes, the ratio polenta / water should be 1:4.

On the sprawling fields of the Azienda Agricola DeTacchi, Francesco deTacchi and his family grow just about the best rice and corn you’ll find North of the river Po. The area around Grumolo delle Abbadesse, home to the Azienda, was recently designated a historic production site by the Slow Food Association, and for good reason, too. After all, the history of rice farming here dates back to the 16th century. So it is just as well that DeTacchi honour the time-honoured methods of cultivation and processing. For example, the company still uses the old barchesse, in whose paved courtyard – the selese – rice sheathes were collected and laid out to dry centuries ago. In the interest of excellent taste, DeTacchi nonetheless doesn’t shun modern technology: “Our rice might be hulled with an 18th century mill, but then we run  it through a state-of-the-art selection machine. In this way, we preserve local history and guarantee quality at the same time.”
