Indeed, Gabrio Bini’s capers come packed full of floral aromas, which really come to shine through the addition of only the finest fleur de sel from Guérande.

G&G Di Giotto Bini
G&G Di Giotto Bini is a winery on the Italian island of Pantelleria. The largely natural volcanic island is located about 100 km southwest of Sicily, a little closer to Africa than to Italy. It is known primarily for two things in the culinary world: wines made from the autochthonous Zibibbio grape and its capers.  In the late 1990s, Milanese architect Gabrio Bini fell in love with this extraordinary terroir while on vacation and never looked back. The Binis’ vines are rooted in volcanic soils at about 350m above sea level and are trained according to the bush-grown system, which is well able to withstand the sometimes harsh winds of Pantelleria. The work in the vineyard is based on traditional methods of viticulture and focusses on  preserving the local environment. Today the winery is run in the second generation by son Giotto, who maintains the philosophy and traditional working methods of his father.
