Apple jelly

For this terrific apple jelly Peter Kunze uses Rheinischen Bohnapfel variety apples from his neighbour’s garden… We’re not kidding, either. Still, you’ll be pleased to hear that Peter doesn’t just go stealing the apples in the dark of night, but gets to harvest them with his neighbour’s consent. First, the apples are pressed, and from this juice Peter makes this delicious jelly with just a touch of vanilla. It is really just the tiniest touch though, and you wouldn’t know it’s there unless we told you. Peter gets his vanilla from “Chocolate Rainer” (Rainer Heubeck) and trusts him blindly, so all we know is that it’s approximately 90% bourbon vanilla. Be that as it may, this is one amazing apple jelly.
