Honey is incredibly versatile. For the purest, most intense experience, simply have it on good bread. Or add it to waffles, pancakes or your breakfast muesli… or to tea, other hot beverages or your favourite salad dressing. Of course, honey is also great to bake with or to use in sauces. If you’re substituting it for sugar when baking, keep in mind that you need roughly 140g of honey when the recipe calls for 100g of sugar. When the honey crystallizes you can put the closed jar in a simmering pot of water, like this you can melt it again, and it will usually stay like this a couple of weeks.



Weingut Odinstal
The Odinstal winery is located high above Wachenheim in the Pfalz, surrounded by 5 hectares of estate-owned vineyards. Right here, just around 35 million years ago, a volcano eruption sent the primeval rock flying, which accounts for the unique features of Odinstal’s terroir. The sediment isn’t stacked on top of each other, but besides one another: within the space of 5 hectares, stone soils are made up of volcanic basalt, shell limestone, Keuper and mottled sandstone. Through biodynamic farming and minimum intervention during vinification, estate manager Andreas Schumann brings out the specifics of these unique soils and each vintage. As an additional boost for the estate’s biodiversity, he also keeps bees. Year after year, Odinstal produces stunning bottles of Riesling, Pinot Blanc, Auxerrois, Silvaner, Rieslaner and Gewürztraminer.
