Vialone Nano rice
Hailing from the province of Padua in the Veneto, this semi whole grain rice is grown and processed according to a centuries-long artisanal tradition. There are no shortcuts with this outstanding product. Not just is it completely free of pesticides, but the rice is also left to mature in the husk for 22 months. That way, the grain absorbs all the precious oils and vitamins, making for its stunningly intense taste.
Thanks to the low-intervention processing, the Vialone Nano Semintegrale retains the best characteristics of whole grain rice: aroma, intensity, high fiber content. However, it cooks much faster than actual whole grain rice and can absorb up to three times its own volume of liquid. DeTacchi recommends it especially for risotto with mushrooms or vegetables, as well as in soups or homemade sushi. And who are we to argue with tradition?
